  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes (drained and chopped)
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  • Sear chicken for 3-4 minutes per side until golden. Remove from skillet and set aside.
  • In the same skillet, add sun-dried tomatoes and spinach, sauté for 2-3 minutes until spinach wilts.
  • Stir in the heavy cream, chicken broth, Parmesan cheese, oregano, and basil. Simmer for 2-3 minutes until sauce thickens slightly.
  • Transfer the chicken breasts to a casserole dish, pour the creamy sauce over them, and sprinkle with shredded mozzarella.
  • Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.
  • Serve hot, garnished with fresh basil or parsley if desired.
