  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • ½ cup sun-dried tomatoes (in oil), drained and chopped

  • 1 cup baby spinach

  • Fresh basil (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Season chicken with salt, pepper, and Italian seasoning.

  3. Heat olive oil in a skillet over medium heat and sear chicken 2–3 minutes per side until golden.

  4. Transfer chicken to a baking dish.

  5. In the same skillet, add garlic and sauté for 1 minute.

  6. Stir in cream, chicken broth, and Parmesan. Simmer for 2–3 minutes until slightly thickened.

  7. Add sun-dried tomatoes and spinach; stir until spinach wilts.

  8. Pour sauce over the chicken.

  9. Bake uncovered for 25–30 minutes or until chicken is cooked through.

  10. Garnish with fresh basil and serve.

  • For extra flavor, marinate chicken in Italian dressing for 30 minutes before searing.
