  • ½ cup all-purpose flour
  • 3 tablespoons butter
  • 1 cup yellow onion, chopped
  • 1 clove garlic, minced
  • 4 cups beef stock or broth
  • 3 cups pumpkin puree
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon kosher or sea salt
  • 1 teaspoon ground black pepper
  • 3 pounds potatoes, peeled and diced
  • 1 pound carrots, peeled and sliced
  • 3-4 thyme sprigs

Instructions

  • Coat beef stew meat in flour.
  • In a large pot, melt butter and brown the beef on all sides.
  • Add chopped onion and minced garlic; cook until fragrant.
  • Pour in beef stock, pumpkin puree, Worcestershire sauce, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 1 hour.
  • Add diced potatoes, sliced carrots, and thyme sprigs.
  • Continue to simmer for an additional 30-45 minutes until vegetables are tender.
  • Adjust seasoning as needed, then serve hot.

Notes

  • For a richer flavor, substitute half of the butter with bacon fat.
