  • 8 oz egg noodles
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 2 tbsp all-purpose flour
  • 1/2 cup frozen peas (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Cook chicken until browned and fully cooked. Remove and shred.
  2. In the same pot, melt butter and sauté onion, carrots, and celery until softened (about 5 minutes).
  3. Add minced garlic and cook for 1 minute. Stir in flour to create a roux and cook for another 1-2 minutes.
  4. Gradually add chicken broth, stirring constantly to avoid lumps. Bring to a boil.
  5. Add shredded chicken, thyme, parsley, salt, and pepper. Simmer for 10 minutes.
  6. Stir in heavy cream, then add egg noodles. Cook noodles according to package instructions.
  7. Add frozen peas (if using), simmer for 2 more minutes, and serve hot.
