  • 2 chicken breasts (sliced or diced)
  • 4 slices of bacon (chopped)
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • Salt to taste
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook pasta in salted boiling water according to package instructions. Reserve 1 cup of pasta water, then drain.
  2. Heat olive oil in a skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Remove from skillet.
  3. In the same skillet, cook bacon until crispy. Add minced garlic and sauté for 1 minute.
  4. In a bowl, whisk eggs, Parmesan cheese, and black pepper. Gradually mix in 1/4 cup of reserved pasta water to temper the eggs.
  5. Toss the cooked pasta in the skillet with bacon and garlic. Remove from heat, and stir in the egg mixture, ensuring a creamy consistency. Add more pasta water if needed.
  6. Fold in cooked chicken. Garnish with fresh parsley and serve immediately.
