  • 3 pounds tomatoes, fresh, cut into 2” pieces
  • ½ onion diced (1 cup)
  • 5 cloves garlic, peeled and chopped
  • 2 Tablespoons olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup fresh basil
  • 2 Tablespoons salted butter
  • 2 Tablespoons all-purpose flour
  • 1 Tablespoon granulated sugar
  • 1 quart vegetable broth
  • Optional: ¼ to ½ cup heavy cream

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss tomatoes, onion, garlic, olive oil, salt, and pepper together on a baking sheet.
  • Roast for 25-30 minutes until vegetables are tender.
  • In a large pot, melt butter over medium heat, then stir in flour and cook for 1 minute.
  • Gradually whisk in vegetable broth, bringing the mixture to a simmer.
  • Add roasted vegetables and fresh basil to the pot, and simmer for 10 minutes.
  • Use an immersion blender to purée the soup until smooth.
  • Stir in optional heavy cream for added richness.
  • Season with additional salt and pepper to taste, and serve hot.

Notes

  • For a smoother texture, strain the soup through a fine-mesh sieve after blending.
  • Adjust the thickness by adding more broth or cream as desired.
