Ingredients

  • 1/2 head of cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp salt (optional)
  • 1/2 tsp oregano
  • 1/2 tsp basil

 

  • 1/4 tsp red pepper flakes (optional)

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté onions, garlic, carrots, celery, and bell pepper until softened.
  • Add cabbage, diced tomatoes, and vegetable broth. Stir well.
  • Season with black pepper, salt, oregano, basil, and red pepper flakes.
  • Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
