1/2 head of cabbage, chopped
1 onion, chopped
2 carrots, sliced
2 celery stalks, chopped
1 bell pepper, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 tsp olive oil
1/2 tsp black pepper
1/2 tsp salt (optional)
1/2 tsp oregano
1/2 tsp basil
1/4 tsp red pepper flakes (optional)
Instructions
Heat olive oil in a large pot over medium heat.
Sauté onions, garlic, carrots, celery, and bell pepper until softened.
Add cabbage, diced tomatoes, and vegetable broth. Stir well.
Season with black pepper, salt, oregano, basil, and red pepper flakes.
Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
