This Cajun Sausage and Rice Skillet is a delicious one-pan meal packed with bold Cajun flavors, smoked sausage, and perfectly cooked rice. Made with simple ingredients, it's a quick and easy dinner that's perfect for busy nights.

  • 1 tbsp olive oil
  • 12 oz smoked sausage, sliced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp dried thyme
  • ¼ tsp black pepper
  • ¼ tsp salt (adjust to taste)
  • ½ cup frozen peas (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  2. In the same skillet, add onion and bell pepper. Sauté for 2-3 minutes until softened. Add garlic and cook for 30 seconds.
  3. Stir in rice, Cajun seasoning, paprika, thyme, black pepper, and salt. Toast rice for 1 minute.
  4. Pour in chicken broth and diced tomatoes (with juice). Stir well.
  5. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
  6. Stir in cooked sausage and peas. Cook for 2 more minutes until heated through.
  7. Remove from heat and let sit for 5 minutes. Fluff with a fork, garnish with green onions, and serve hot.
