  • ¼ cup avocado/vegetable oil
  • ¼ cup all-purpose flour
  • 1 white onion, chopped
  • 2 tsp low sodium Cajun seasoning
  • 2 tsp dry thyme
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp sugar
  • ¼ tsp red pepper flakes
  • 6 garlic cloves, minced
  • 4 cups chicken stock (32 oz)
  • 1 cup water
  • 2 lbs green beans, stems snapped and halved
  • 1 lb red or russet potatoes, quartered or halved
  • 2 tbsp unsalted butter
  • 1 tbsp Louisiana hot sauce

Instructions

  • In a large pot, heat oil over medium heat, then whisk in flour to make a roux. Stir until golden brown.
  • Add the onion and cook until softened. Stir in Cajun seasoning, thyme, salt, pepper, sugar, red pepper flakes, and garlic.
  • Slowly whisk in chicken stock and water, bringing to a simmer.
  • Add green beans and potatoes. Cook for 30-40 minutes until tender.
  • Stir in butter and hot sauce. Serve warm.

Notes

  • For extra heat, increase red pepper flakes or hot sauce.
  • Russet potatoes can be used for a creamier texture.
  • Fresh or frozen green beans both work well.
