  • 1 lb cheese tortellini
  • 1 lb thinly sliced steak (ribeye or sirloin works best)
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole milk recommended)
  • 1 ½ cups shredded provolone cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add steak slices, season with salt and pepper, and cook until browned. Remove and set aside.
  3. In the same skillet, sauté bell peppers, onions, and garlic until tender. Remove and set aside with the steak.
  4. In a saucepan, melt butter over medium heat. Whisk in flour to form a roux, then gradually add milk while whisking continuously.
  5. Cook the sauce until slightly thickened, then stir in shredded provolone cheese until smooth. Season with salt and pepper.
  6. Combine the cooked tortellini, steak, and veggies in the skillet. Pour the cheese sauce over and mix gently until evenly coated.
  7. Serve warm, garnished with fresh parsley if desired.

  • Ribeye or sirloin steak is ideal for this recipe, but you can use ground beef for convenience.
