Cheesy ground beef quesadillas are the ultimate comfort food, packed with seasoned beef, gooey cheese, and crispy tortillas.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup diced onion
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Heat a skillet over medium heat and cook the ground beef with diced onion until browned. Drain excess fat.
  2. Stir in taco seasoning and a small splash of water. Let simmer for 2 minutes.
  3. Lay a tortilla flat and sprinkle half with shredded cheddar and Monterey Jack cheeses. Add cooked beef on top.
  4. Fold the tortilla in half and press gently.
  5. Heat olive oil in a clean skillet over medium heat. Cook each quesadilla for 2-3 minutes per side until crispy and golden brown.
  6. Slice into wedges and serve warm.

Notes

  • Add diced bell peppers or jalapeños for extra flavor.
  • Serve with sour cream, salsa, or guacamole on the side.
  • Use pre-cooked rotisserie chicken as a beef alternative if desired.
