These Cheesy Mashed Potato Puffs are a delicious way to use leftover mashed potatoes! Baked until golden and crispy, they're packed with melty cheese and savory goodness. Perfect as a snack, side dish, or party appetizer!

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ¼ cup sour cream
  • ¼ cup chopped green onions
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

 

  • ½ cup breadcrumbs (optional, for extra crispiness)

Instructions

  • Preheat oven to 375°F (190°C). Grease a muffin tin.
  • In a large bowl, mix mashed potatoes, cheese, eggs, sour cream, green onions, garlic powder, salt, and pepper.
  • Scoop mixture into the muffin tin, filling each cup about ¾ full.
  • Bake for 25-30 minutes, or until golden and crispy on the edges.
