  • 1/2 teaspoon lemon zest

Instructions

  1. In a large bowl, combine flaked cooked salmon, egg, mayo, mustard, green onions, parsley, salt, pepper, and lemon zest.

  2. Mix gently until well combined. Add breadcrumbs a little at a time until the mixture holds together.

  3. Shape into small patties (about 6-8).

  4. Heat olive oil in a nonstick skillet over medium heat.

  5. Cook salmon cakes 3-4 minutes per side, until golden brown and cooked through.
