  • 1 lb (450g) chicken breast, cut into thin strips
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 cups cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 12 oz (340g) pasta (penne or fettuccine recommended)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil and 1 tbsp butter in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden and set aside.
  3. In the same skillet, add 2 tbsp butter and cook mushrooms until softened. Add garlic and sauté for 1 minute.
  4. Deglaze the pan with Marsala wine, scraping the browned bits. Let it simmer for 3-4 minutes.
  5. Add chicken broth and bring to a simmer. Stir in heavy cream and simmer until the sauce thickens slightly.
  6. Return chicken to the pan, mix, and heat through.
  7. Toss the cooked pasta in the sauce until well coated.
  8. Top with Parmesan cheese and parsley before serving.

  • Use dry Marsala wine for a more traditional flavor.
  • Substitute chicken thighs for extra juiciness if preferred.
  • For a lighter option, swap heavy cream for half-and-half.
