  • 1/4 cup grated Parmesan cheese

  • 1/4 tsp salt (adjust to taste)

  • 1 tbsp olive oil

  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and reserve 1/2 cup pasta water.

  2. In a blender, combine cottage cheese, garlic, Parmesan, salt, pepper, and a splash of pasta water. Blend until smooth.

  3. In a pan, heat olive oil over medium heat. Pour in the cottage cheese sauce and cook for 2–3 minutes until warmed through.

  4. Add cooked pasta to the pan and toss until evenly coated. Add more pasta water if needed for a creamier texture.

  5. Garnish with fresh herbs and serve hot.
