Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup shredded cheddar cheese
  • 6 slices cooked bacon, chopped
  • 2 tbsp olive oil
  • 1/4 cup chopped green onions (optional for garnish)
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
  • Cook the chicken for 5-7 minutes per side, until browned and fully cooked. Remove from the skillet and set aside.
  • In the same skillet, lower the heat and add the cream cheese and ranch seasoning. Stir until the cream cheese melts and combines with the seasoning.
  • Add cheddar cheese and stir until melted and creamy.
  • Return the chicken to the skillet, spooning the creamy sauce over the top.
  • Top with chopped bacon and green onions. Let it simmer for 2-3 minutes until everything is heated through.
  • Serve hot, garnished with more green onions if desired.

Notes

  • You can use shredded chicken or chicken thighs instead of breasts.
  • For a spicier version, add some crushed red pepper flakes or hot sauce to the cream cheese mixture.
  • Serve over cauliflower rice, zucchini noodles, or with a side of veggies for a low-carb meal.
