Ingredients

  • 300g spaghetti or fettuccine
  • 2 chicken breasts, cooked and sliced
  • 4 slices bacon, chopped
  • 2 large eggs
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta in salted boiling water according to package instructions. Reserve 1 cup of pasta water.
  2. In a large skillet, cook bacon over medium heat until crispy. Remove and set aside.
  3. In the same skillet, add olive oil and cook garlic until fragrant. Add cooked chicken slices.
  4. In a bowl, whisk eggs, heavy cream, and parmesan cheese until smooth.
  5. Add drained pasta to the skillet with chicken. Remove from heat, and quickly stir in the egg mixture, tossing to coat.
  6. Add reserved pasta water as needed to reach the desired consistency.
  7. Season with salt and pepper, then toss with crispy bacon. Garnish with parsley and serve warm.

Notes

  • Be sure to remove the skillet from heat before adding the egg mixture to prevent scrambling.
  • Substitute heavy cream with half-and-half for a lighter version.
  • Use freshly grated parmesan for the best flavor.
