  • 1 small onion, diced

  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 3 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 16 oz potato gnocchi
  • 1 cup fresh spinach, chopped
  • 1 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  • In a large pot, melt butter over medium heat. Add onion, garlic, carrot, and celery. Sauté until softened.
  • Stir in shredded chicken, chicken broth, thyme, basil, salt, and pepper. Bring to a gentle boil.
  • Add gnocchi and cook according to package instructions until they float.
  • Reduce heat to low. Stir in heavy cream and milk, letting the soup simmer for a few minutes.
  • Add spinach and Parmesan cheese, stirring until spinach wilts.
  • Taste and adjust seasoning as needed. Serve hot.

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp cold water and stir in before adding the spinach.
  • Swap spinach for kale for a heartier texture.
  • Use rotisserie chicken for a quick and easy option.
