  • 1 lb chicken breast or thighs, cubed
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 cups sliced mushrooms
  • 1 tsp paprika
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add cubed chicken, season with salt and pepper, and cook until golden brown. Remove and set aside.
  2. In the same skillet, sauté onions until translucent. Add garlic and cook for 1 minute.
  3. Stir in mushrooms and paprika, cooking until mushrooms are tender.
  4. Sprinkle flour over the mixture, stirring to coat. Slowly pour in chicken broth, stirring constantly to avoid lumps.
  5. Bring to a simmer and add sour cream. Stir until sauce is creamy and smooth.
  6. Return chicken to the skillet, simmer for 5-7 minutes, or until chicken is fully cooked and sauce has thickened.
  7. Garnish with fresh parsley and serve over noodles, rice, or mashed potatoes.
