  • 16 ounces Italian sausage
  • ¼ cup butter (½ stick)
  • ½ medium onion, chopped small
  • 2 sticks celery, chopped small
  • 2 cloves garlic, minced
  • 6 tablespoons flour
  • 4 cups low sodium chicken broth
  • 2 cups half-and-half
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 pound Russet potatoes, peeled & diced small
  • Salt & pepper to taste

Instructions

  • Cook the Italian sausage in a large pot over medium heat until browned. Remove and set aside.
  • In the same pot, melt butter and sauté onion, celery, and garlic until softened.
  • Stir in flour to create a roux, cooking for about 1 minute.
  • Slowly whisk in chicken broth and half-and-half, bringing it to a simmer.
  • Add Worcestershire sauce, red pepper flakes (if using), potatoes, and cooked sausage. Simmer until the potatoes are tender.
  • Season with salt and pepper to taste before serving.

Notes

  • For a spicier version, increase the red pepper flakes.
  • You can substitute Italian sausage with turkey sausage for a lighter version.
