Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 oz mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes per side until golden brown and fully cooked. Remove from the skillet and set aside.
  • In the same skillet, add butter and sliced mushrooms. Cook until soft and browned, about 5 minutes.
  • Stir in minced garlic and cook for 1 more minute.
  • Pour in chicken broth and cream, stirring to combine. Simmer for 5 minutes, allowing the sauce to thicken.
  • Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 3-4 minutes.
  • Garnish with fresh parsley and serve.

Notes

  • You can use half-and-half instead of heavy cream for a lighter version.
  • This dish pairs well with rice, mashed potatoes, or pasta.
