  • 6 slices thick-cut bacon, diced
  • 1 small yellow onion, diced
  • 3 stalks celery, diced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 2 cups chicken stock
  • 2 lbs russet potatoes, peeled and diced
  • 2 cups whole milk
  • Salt and pepper to taste
  • Shredded cheddar cheese, diced scallions, bacon for topping

Instructions

  • Cook bacon until crispy, then remove from pot and set aside.
  • In the same pot, sauté onion, celery, carrots, and garlic until softened.

  • Stir in milk and season with salt and pepper.

Notes

For a vegetarian version, omit the bacon and use vegetable broth instead of chicken stock.
