  • 12 oz pasta (penne or fettuccine)
  • 2 cups cooked chicken (shredded or diced)
  • 1 cup ricotta cheese
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • ½ tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • ½ cup pasta water (reserved)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  • Cook pasta according to package instructions. Reserve ½ cup of pasta water and drain the rest.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Stir in cooked chicken, Italian seasoning, and red pepper flakes. Cook for 2 minutes.
  • Lower heat and add ricotta cheese, heavy cream, and Parmesan. Stir until smooth.
  • Gradually add pasta water until the sauce reaches desired consistency.
  • Toss in cooked pasta and mix well. Season with salt and pepper.
  • Garnish with fresh basil or parsley and serve warm.

  • Use whole-milk ricotta for a richer flavor.
  • Add spinach or sun-dried tomatoes for extra depth.
