  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup sun-dried tomatoes (drained and chopped)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
  2. Sear chicken breasts for 5-6 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add garlic and cook for 1 minute until fragrant.
  4. Stir in sun-dried tomatoes, spinach, chicken broth, and heavy cream. Let the sauce simmer for 2-3 minutes until slightly thickened.
  5. Add Parmesan cheese and Italian seasoning, stirring until the sauce becomes creamy.
  6. Return the chicken to the skillet and simmer for another 5-7 minutes until the chicken is fully cooked and the sauce has thickened.
  7. Garnish with fresh basil and serve hot.
