12 oz pasta (penne or rigatoni)
2 tbsp olive oil
1 small onion, finely chopped
3 garlic cloves, minced
1/4 cup vodka
1 cup tomato puree or passata
1/2 cup heavy cream
1/2 tsp red pepper flakes (optional)
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Cook pasta in salted water until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until softened.
Pour in vodka and cook for 2-3 minutes, allowing alcohol to evaporate.
Stir in tomato puree and red pepper flakes; simmer for 5 minutes.
Add heavy cream and mix well until sauce becomes creamy.
Toss cooked pasta into the sauce, stirring to coat evenly.
Season with salt, pepper, and Parmesan cheese. Garnish with fresh basil before serving.
