1 lb chicken breast (cubed)
2 cups penne pasta
1 cup heavy cream
1 cup chicken broth
1 cup shredded Parmesan cheese
1 tablespoon Cajun seasoning
1 teaspoon paprika
1 teaspoon garlic powder
1 cup diced tomatoes (optional)
1 cup bell peppers (sliced)
1/2 teaspoon black pepper
Salt to taste
Instructions
Add cubed chicken, Cajun seasoning, garlic powder, paprika, and black pepper to the crock pot.
Pour in chicken broth and diced tomatoes (if using). Stir to combine.
Cook on low for 4-5 hours or high for 2-3 hours.
During the last 30 minutes, add the heavy cream and pasta. Stir to coat.
Let pasta cook until tender, then add Parmesan cheese and bell peppers. Stir well.
