  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can diced tomatoes with green chiles
  • 1 cup corn kernels
  • 8 oz shredded cheddar cheese
  • 8 oz shredded Monterey Jack cheese
  • 6 flour tortillas
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives (optional)
  • Chopped cilantro for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef in a skillet over medium heat. Drain fat.
  3. Add taco seasoning, black beans, diced tomatoes, and corn. Simmer for 5 minutes.
  4. Layer 3 tortillas at the bottom of a greased casserole dish.
  5. Spread half of the beef mixture, then top with cheese.
  6. Repeat layers with remaining tortillas, beef, and cheese.
  7. Bake uncovered for 25-30 minutes, until bubbly and golden.
  8. Serve with sour cream, black olives, and cilantro.
