  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1/2 medium onion, chopped
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 (14 oz) can black beans, drained & rinsed
  • 1 (12 oz) can corn, drained
  • 1 (15.5 oz) jar salsa (your favorite kind)
  • 2 cups shredded Mexican cheese blend (or cheddar), divided
  • Optional toppings: tomatoes, cilantro, scallions, avocado, black olives, sour cream, lettuce

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium heat. Add ground beef and onion; cook until beef is browned and onions are soft.
  • Stir in chili powder, garlic powder, and cumin. Remove from heat.
  • In a baking dish, layer crushed Doritos, the beef mixture, black beans, corn, salsa, and 1 cup of cheese.
  • Top with remaining cheese.
  • Bake for 20-25 minutes or until bubbly and golden.
  • Add your favorite toppings before serving.
