Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup beef broth
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, jalapeños

Instructions

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, brown ground beef over medium heat. Add onions and garlic, cooking until softened.
  • Stir in diced tomatoes, enchilada sauce, beef broth, and cumin. Bring to a simmer.
  • Add cooked pasta to the skillet and mix to coat.
  • Stir in cheddar and Monterey Jack cheeses, cooking until melted and creamy.
  • Season with salt and pepper to taste.
  • Serve hot, topped with optional toppings like sour cream, cilantro, and jalapeños.
