Ingredients

Scale
  • 4 chicken thighs (bone-in, skin-on)
  • 1 lb baby potatoes, halved
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, thyme, and paprika.
  • Add chicken to skillet, skin-side down. Cook until golden, about 5-7 minutes per side. Remove and set aside.
  • In the same skillet, add potatoes, season with salt and pepper, and cook until tender, about 10 minutes.
  • Add butter and garlic, stirring until garlic is fragrant, about 1-2 minutes.
  • Return chicken to the skillet, cover, and cook until chicken is cooked through, about 15 minutes.
  • Garnish with parsley and serve hot.

Notes

  • Ensure chicken reaches an internal temperature of 165°F.
  • Use Yukon Gold or red potatoes for best results.
  • For a lighter version, swap butter with olive oil.
