  • 1 pound lean ground beef (90-10% blend)
  • 2.2 ounces Lipton Beefy Onion Soup Mix
  • 21 ounces cream of mushroom soup
  • 4 ounces sliced mushrooms, drained
  • 2 cups beef broth
  • ¾ cup whole milk
  • ¾ cup sour cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups Minute Rice white rice
  • 8 ounces Colby jack cheese, shredded
  • 1½ tablespoons fresh parsley, chopped (optional garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Stir in the Lipton Beefy Onion Soup Mix, cream of mushroom soup, sliced mushrooms, beef broth, milk, sour cream, salt, and pepper. Mix well and bring to a simmer.
  • Add the rice and stir to combine.
  • Transfer mixture to a greased 9x13-inch baking dish. Top with shredded Colby jack cheese.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Garnish with fresh parsley, if desired. Serve hot.
