  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups cabbage, shredded
  • 4 medium potatoes, diced
  • 4 cups chicken broth
  • 1 cup milk or heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme
  • 2 tablespoons butter

Instructions

  • In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  • In the same pot, sauté the onion and garlic in bacon grease until soft.
  • Add the cabbage and cook for 5 minutes, stirring occasionally.
  • Add potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 20 minutes).
  • Stir in milk or cream and butter, then let simmer for another 5 minutes.
  • Return the bacon to the pot, stir well, and serve hot.

Notes

  • For extra flavor, use smoked bacon or ham.
  • Heavy cream makes the soup richer, but milk works for a lighter version.
