  • 1 pound boneless/skinless chicken, cut into bite-size pieces
  • 1 pound bacon, cooked and crumbled
  • 16 ounces rotini pasta
  • 2 (8 oz) packages of cream cheese, softened at room temperature
  • 1 cup sour cream
  • 2 cups Mexican Cheddar Jack cheese, divided
  • 6 jalapeno peppers, deseeded and diced
  • 6 green onions, thinly sliced

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • Cook the rotini pasta according to package instructions. Drain and set aside.
  • In a skillet, cook chicken pieces until fully cooked, and set aside.
  • In a large bowl, mix softened cream cheese, sour cream, 1½ cups of shredded cheese, diced jalapenos, and cooked bacon.
  • Add cooked chicken and pasta into the mixture, stirring to combine.
  • Pour the mixture into the prepared baking dish. Top with remaining shredded cheese.
  • Bake for 20-25 minutes or until the cheese is melted and bubbly.
  • Garnish with sliced green onions and serve warm.
