1 pound boneless/skinless chicken, cut into bite-size pieces
1 pound bacon, cooked and crumbled
16 ounces rotini pasta
2 (8 oz) packages of cream cheese, softened at room temperature
1 cup sour cream
2 cups Mexican Cheddar Jack cheese, divided
6 jalapeno peppers, deseeded and diced
6 green onions, thinly sliced
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
Cook the rotini pasta according to package instructions. Drain and set aside.
In a skillet, cook chicken pieces until fully cooked, and set aside.
In a large bowl, mix softened cream cheese, sour cream, 1½ cups of shredded cheese, diced jalapenos, and cooked bacon.
Add cooked chicken and pasta into the mixture, stirring to combine.
Pour the mixture into the prepared baking dish. Top with remaining shredded cheese.
Bake for 20-25 minutes or until the cheese is melted and bubbly.
Garnish with sliced green onions and serve warm.
