  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 packet biscuit mix (like Bisquick)
  • 1 cup water (for biscuit mix)
  • 2 large eggs, beaten

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and 1 cup water to beef. Stir in diced tomatoes and green chilies. Simmer for 5 minutes.
  4. In a mixing bowl, combine sour cream, mayonnaise, and 1 cup cheddar cheese. Set aside.
  5. In a separate bowl, prepare the biscuit mix with 1 cup of water and beaten eggs.
  6. In a greased baking dish, layer the beef mixture, diced onions, and peppers. Spread the sour cream mixture over the top.
  7. Pour the biscuit mix over the casserole and sprinkle the remaining cheddar cheese.
  8. Bake for 30-35 minutes, or until the biscuit topping is golden brown.
  9. Let cool for 5-10 minutes before serving.
