  • 1 medium onion, diced
  • 1 (1-ounce) packet taco seasoning mix
  • 1/2 cup water
  • 1 (10-ounce) can diced tomatoes with green chilies, drained
  • 1 (4-ounce) can diced jalapeños, drained (optional)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded cheddar cheese (divided)
  • 1 large tomato, sliced thin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 (8-ounce) can of refrigerated crescent roll dough or biscuit dough

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef and diced onion over medium heat until the beef is browned and onion is softened.
  3. Stir in taco seasoning mix, water, and diced tomatoes with green chilies. Let simmer for 5-7 minutes.
  4. In a small bowl, mix sour cream, mayonnaise, garlic powder, onion powder, smoked paprika, salt, and pepper. Set aside.
  5. In a greased 9x13-inch baking dish, unroll the crescent roll dough and press it into the bottom of the dish.
  6. Layer the cooked beef mixture over the dough.
  7. Spread the sour cream mixture on top, followed by a layer of sliced tomatoes.
  8. Sprinkle the first portion (1 cup) of shredded cheddar cheese over the tomatoes.
  9. Bake for 25-30 minutes until the casserole is bubbly and golden.
  10. Remove from oven and sprinkle the remaining cheese on top. Let it sit for 5 minutes before serving.

  • To make it spicier, you can add diced jalapeños.
  • For a crispier crust, prebake the dough for a few minutes before layering the other ingredients.
