  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • ½ cup milk
  • 1 cup fresh or frozen blueberries (tossed in a little flour)

For the Lemon Glaze:

  • ½ cup powdered sugar
  • 1-2 tbsp lemon juice (adjust for desired consistency)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat sugar and melted butter until smooth. Add eggs, vanilla extract, lemon zest, and lemon juice, mixing until combined.
  4. Alternate adding the flour mixture and milk to the wet ingredients, beginning and ending with the flour mixture. Gently fold in the blueberries.
  5. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  7. For the glaze, mix powdered sugar with lemon juice until smooth and drizzle over the cooled bread.

Notes

  • Tossing the blueberries in a little flour helps prevent them from sinking to the bottom of the bread.
  • Fresh or frozen blueberries can be used, but frozen berries may add a bit more moisture.
  • For an extra lemony flavor, add more zest or a few drops of lemon extract.
