Ingredients

  • 1 large head of cauliflower, chopped into florets
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 4 slices cooked bacon, crumbled
  • 2 green onions, thinly sliced
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam or boil the cauliflower florets until tender, then drain and pat dry.
  3. Mash the cauliflower in a large bowl or pulse in a food processor until smooth.
  4. Stir in the sour cream, cream cheese, garlic powder, salt, and pepper until combined.
  5. Fold in half the cheddar cheese, Parmesan cheese, and half the bacon crumbles.
  6. Transfer the mixture to a greased baking dish.
  7. Sprinkle the remaining cheddar cheese and bacon on top.
  8. Bake for 20–25 minutes or until bubbly and golden brown.
  9. Garnish with sliced green onions before serving.

  • Use a food processor for smoother cauliflower mash.
