  • 4 large potatoes, peeled and cubed
  • ½ tsp salt
  • 8 oz bacon, bite-sized pieces
  • 4 Tbsp unsalted butter
  • ½ medium onion, finely chopped
  • 2 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 2 ½ cups whole milk
  • 2 ½ cups chicken broth
  • 1 cup mild or sharp cheddar cheese, shredded
  • ¾ cup sour cream
  • 1 tsp salt, or to taste
  • ¼ tsp pepper, or to taste
  • Green onions, to serve

Instructions

  • Cook bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  • Add butter to the bacon drippings, then sauté onions and garlic until soft.
  • Stir in flour and cook for 1-2 minutes, then gradually whisk in milk and chicken broth until smooth.
  • Add potatoes and bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in cheddar cheese, sour cream, bacon, salt, and pepper.
  • Serve with chopped green onions on top.
