  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup BBQ sauce
  • 4 slices cooked bacon, crumbled
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cheddar cheese, shredded
  • 1 medium tomato, diced
  • 2 green onions, sliced

Instructions

  • Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes per side, or until fully cooked.
  • Preheat the oven to 400°F (200°C). Place the cooked chicken breasts on a baking sheet.
  • Spread BBQ sauce over each chicken breast, then top with crumbled bacon, Monterey Jack cheese, and cheddar cheese.
  • Bake for 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven, top with diced tomatoes and green onions, and serve.
