This mozzarella-stuffed meatloaf recipe is a cheesy and flavorful twist on the classic meatloaf.   • 1 ½ lbs ground beef
  • 1 cup breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ cup ketchup (plus extra for topping)
  • ¼ cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Italian seasoning, paprika, ketchup, milk, salt, and pepper. Mix until well combined.
  3. On a piece of parchment paper, flatten the meat mixture into a rectangular shape.
  4. Sprinkle the shredded mozzarella cheese evenly over the center of the meat rectangle.
  5. Roll the meat mixture tightly, sealing the edges to enclose the cheese. Transfer the loaf to a greased baking dish.
  6. Brush the top with additional ketchup for extra flavor.
  7. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Let it rest for 10 minutes before slicing and serving.
