  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 2 cups broccoli florets (fresh or frozen)
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon paprika

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and paprika, and sear for 4-5 minutes on each side until golden brown. Remove chicken and set aside.
  • In the same pan, sauté diced onions and garlic until softened, about 2-3 minutes.
  • Stir in rice and chicken broth, bring to a simmer.
  • Return the chicken breasts to the pan, cover, and cook for 15-20 minutes until the rice is tender and chicken is cooked through.
  • Add broccoli florets during the last 5 minutes of cooking.
