  • 1 whole chicken (3-4 lbs), butterflied

  • 3 tbsp olive oil

  • 3 tbsp soy sauce

  • 1 tbsp lime juice

  • 4 cloves garlic, minced

  • 1 tbsp ground cumin

  • 1 tbsp smoked paprika

  • 1 tbsp ground oregano

  • 1 tsp ground black pepper

  • 1 tsp salt

  • 1 tbsp white vinegar

  • 1 tbsp Aji Amarillo paste (optional, for authentic flavor)

Instructions

  1. In a bowl, mix olive oil, soy sauce, lime juice, garlic, cumin, paprika, oregano, black pepper, salt, vinegar, and Aji Amarillo paste.

  2. Rub the marinade all over the chicken, ensuring full coverage.

  3. Refrigerate and marinate for at least 4 hours, preferably overnight.

  4. Preheat grill to medium-high heat.

  5. Grill chicken skin-side down for 10-15 minutes, then flip and grill for another 20-30 minutes until internal temperature reaches 165°F.

  6. Rest for 10 minutes before carving.

Notes

  • For a spicier kick, add extra Aji Amarillo paste or chili flakes.

  • Best served with green sauce (Aji Verde) and roasted potatoes.
