Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 tablespoons dry ranch seasoning mix
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine softened cream cheese, shredded cheddar cheese, ranch seasoning, garlic powder, salt, and pepper. Mix until smooth and creamy.
  • Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the cream cheese mixture and secure the opening with toothpicks.
  • Heat olive oil and butter in a large oven-safe skillet over medium heat. Sear the chicken breasts for 3-4 minutes per side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
  • Let the chicken rest for a few minutes before serving.

Notes

  • For extra flavor, add chopped spinach or sun-dried tomatoes to the cheese filling.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
