Sausage and Rice is a simple, flavorful one-pan dish that combines savory sausage with tender rice and aromatic vegetables.   • 1 lb sausage (Italian, smoked, or andouille), sliced
  • 1 1/2 cups white rice (uncooked)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes (optional)
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage from the skillet and set aside.
  • In the same skillet, sauté the diced onion and bell pepper until softened, about 4-5 minutes. Add garlic and cook for another minute.
  • Stir in the uncooked rice, chicken broth, diced tomatoes (if using), paprika, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Return the sausage to the skillet, stir to combine, and cook for another 2-3 minutes until heated through.
  • Garnish with fresh parsley and serve hot.

Notes

  • You can use brown rice instead of white, but adjust cooking time as needed.
  • For a spicier kick, add a pinch of red pepper flakes or use hot sausage.
  • Substitute chicken or turkey sausage for a leaner option.
