  • 1 tsp Italian seasoning

  • 2 cups fresh spinach
  • 1 package (10 oz) cheese tortellini
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles.
  • Add onion, carrots, celery, and garlic. Sauté for 4-5 minutes until softened.
  • Pour in chicken broth and diced tomatoes. Stir in Italian seasoning, salt, and pepper.
  • Bring the soup to a simmer and cook for 10 minutes.
  • Add tortellini and simmer for 5-7 minutes until tender.
  • Stir in fresh spinach until wilted.
  • Serve hot, garnished with Parmesan cheese if desired.
