  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Toothpicks for sealing

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat olive oil and sauté spinach until wilted. Remove from heat and mix with cream cheese, mozzarella, garlic, salt, and pepper.
  • Cut a pocket in each chicken breast and stuff with the spinach mixture. Secure with toothpicks.
  • Season the chicken breasts with paprika, salt, and pepper.
  • In a large oven-safe skillet, heat olive oil over medium heat. Sear the chicken breasts for 3-4 minutes per side until golden.
  • Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Remove toothpicks before serving and enjoy.
