  • 4 boneless, skinless chicken breasts
  • 1/2 cup cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix cream cheese, spinach, mozzarella, Parmesan, and garlic until well combined.
  • Cut a pocket into the thick side of each chicken breast, being careful not to slice all the way through.
  • Stuff each chicken breast with the cream cheese mixture, securing the edges with toothpicks if necessary.
  • Season the outside of the chicken with salt, pepper, paprika, and Italian seasoning.
  • Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken for 2-3 minutes per side until golden brown.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Let rest for a few minutes before serving.

Notes

  • For added flavor, use sun-dried tomatoes or bacon in the filling.
  • You can also grill the stuffed chicken instead of baking.
