Ingredients

  • Ground beef
  • Taco seasoning
  • Pasta (penne, rotini, or any short pasta)
  • Diced tomatoes
  • Tomato sauce
  • Sour cream
  • Shredded cheese (cheddar or Mexican blend)
  • Onion
  • Garlic
  • Olive oil
  • Salt and pepper

Instructions

  • Cook the pasta according to package directions and drain.
  • In a large skillet, heat olive oil, sauté onions and garlic until softened.
  • Add ground beef and cook until browned, then drain excess fat.
  • Stir in taco seasoning, diced tomatoes, and tomato sauce. Simmer for 5 minutes.
  • Mix in the cooked pasta and sour cream until well combined.
  • Sprinkle shredded cheese on top, stir, and let it melt.
  • Serve hot and garnish with fresh cilantro or green onions if desired.
