  • 1 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup semi-sweet chocolate chips
  • ½ cup melted dark chocolate
  • Chocolate frosting (for layering and topping)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and baking soda.
  • Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
  • Stir in boiling water until the batter is smooth.
  • Fold in chocolate chips. Pour batter evenly into prepared pans.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Cool cakes in pans for 10 minutes, then remove to wire racks to cool completely.
  • Once cooled, frost the cakes with melted dark chocolate and chocolate frosting.

Notes

  • For an extra rich flavor, substitute coffee for boiling water.
  • Add a layer of chocolate ganache between the cake layers for more decadence.
  • Can be made a day in advance, refrigerate and bring to room temperature before serving.
