  • 1/2 medium onion, chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (thigh)
  • 1 small green bell pepper, chopped
  • 1 (14 oz) can diced tomatoes with juices
  • 1 (14 oz) can pumpkin puree
  • 1 (14 oz) can white (cannellini) beans, drained
  • 1 (14 oz) can red kidney beans, drained
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup chicken broth
  • Salt & pepper to taste
  • Optional garnishes: Mexican cheese blend, cilantro, sour cream/Greek yogurt, avocado, etc.

Instructions

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.
  • Stir in minced garlic and cook until fragrant.
  • Add ground turkey to the pot, breaking it apart, and cook until browned.
  • Mix in chopped green bell pepper, diced tomatoes (with juices), pumpkin puree, white beans, and red kidney beans.
  • Season with chili powder, smoked paprika, ground cumin, dried oregano, cayenne pepper (if using), and salt & pepper to taste.
  • Pour in chicken broth, stir well, and bring the chili to a boil.
  • Reduce the heat, cover, and let it simmer for 20-25 minutes, stirring occasionally.
  • Adjust seasoning as needed and serve hot with desired garnishes.

Notes

  • Adjust the spiciness by altering the amount of cayenne pepper.
  • This chili can be made ahead and tastes even better the next day.
  • It freezes well, so consider making a double batch.
